When Hubs' out on social night...

I decided I would cook a nice dinner for myself. Hmmm... I imagine myself like Nigella Lawson: 'cooking for myself' and totally relaxing and therapeutic.

I modified a recipe from Seasons of Sicily by Natalia Ravida (posted on olio2go.wordpress.com):
Linguine with lemon zest   (I used tagliatelle instead.)

My pretty little side salad - didn't have greens in the fridge but I had all-time healthy celery & I had apples! So I decided to cut them into small bitesize chunks & just throw them together in my mini oven for a brief roast. Slightly under 15 minutes. Just enough time for the apples to kinda become crispy on the outside but soft on the inside. For extra flavour, I chopped up a rash of streaky beacon & added a couple dashes of olive oil. Just some sea salt & pepper to taste when it was done. Oh! and lemon juice for the twang, as Jamie would say.

The result - phenomenal! I love my creation to bits & gonna whip this up some day again.

Note to self: the lemon zest has to be shredded finer next time.
